Welcome to Mushicharou

Our head chef has over 40 years of experience in Chinese cuisine and Yakuzen, and has been recognized with numerous awards from government bodies and culinary institutions.

Beppu’s tradition of Jigoku-mushi, a cooking method using the hot spring steam that flows abundantly through this land and found nowhere else, inspired him deeply.

With his years of experience, he set out to discover what only this land could offer.

Among his creations are soups distilled from pure hot spring steam over six hours, and a signature dried fruit made by steaming fresh fruits with geothermal steam and then drying them.

And a variety of Jigoku-mushi dishes.

Each one is a product of this land’s singular gift.

We offer a course menu where Jigoku-mushi meets Yakuzen, a combination found only here,

at Mushicharou.

Commitment

A traditional cooking vessel that harnesses the natural steam of Beppu.

At Mushicharou, soups are distilled using this steam for approximately five hours.

A washing method developed by a scientist from Beppu.

Designed to preserve the natural quality of fresh ingredients.

Ingredients are cooked slowly and gently at low temperature.
